For pure influence and payoff, start with The Lord of the Rings. If you want something faster and more bingeable as a modern entry point, Mistborn or Red Rising hook you in a single book.
Should I read in publication or chronological order?
Publication order is the safe default for nearly all of these. The notable exception is The Cosmere, which has its own recommended cross-series reading order rather than strict release date.
