Why this order?

Premiere order is the way in: Chicago Fire first (2012), then Chicago P.D. (2014), then Chicago Med (2015), with the short-lived Chicago Justice (2017) as a completionist coda. Fire is the mothership, and each later show was introduced through it, so watching in premiere order means every character you meet in P.D. and Med arrives with the context the writers intended.

That said, this is Dick Wolf procedural territory: the individual episodes stand alone well, and plenty of fans follow just one or two of the shows. What actually requires coordination is the franchise's signature move, the crossover event. Once or twice a season NBC runs a story across two or three of the shows in a single night, and those episodes must be watched in the announced order for the story to make sense.
